George Ray's Potato Salad

KCTS 9 Cooks Potatoes

Serves 10 to 12

Ingredients

5 pounds potatoes, peeled, boiled and cut into chunks
4 bunches green onions, cleaned and sliced
3 bunches radishes, sliced thin
6 hard-boiled eggs, chopped
3 heaping teaspoons mustard
32 ounces real mayonnaise
salt and celery seed to taste

Preparation

Cook potatoes, cut up and add onions, radishes and eggs. Add mayonnaise, mustard, salt and celery seed (be generous with the celery seed). Mix well and top salad with additional celery seed.

A roaster pan works great for mixing this up, and if the salad is for a picnic just leave it in the roaster and serve from there.
